if u leave the game for like a day or longer do ur taxes get collected and do ur bills get paid automatically or no"?

That will stack up and when you come back you can collect for all the days you missed.

Interest does build, yes. It shouldn't be bad for your nation, though.

While you get bill interest, you get taxes interest as well, so it evens out.
